Pasta in coils Can't stop the pasta production today !

The craze has come upon us again - made some more Pasta today - tried out a new recipe using three eggs instead of two - should have stuck to the old recipe - you will find it here on this site.  In fact it should have been easy but ended up looking too much like short pastry and wouldn't mix properly then I thought maybe this is why people decide it is too hard and give up.  Quite possibly they have used a recipe that didn't work for them and if you have some bad experiences first off it can pretty much put you off.

After giving this new recipe a whirl and adjusting it so it would go through my pasta machine I had this urge to make more and ended up making another three lots with my original recipe and added tomato puree to one lot and thyme to one of the other mixes and they all came out great.  You can add any pureed veggie or herb mix, dry herbs if you like but it is easier if you puree them or you could use pesto or any similar type of paste to get the taste you want and you will end up with a cool green pasta or a bright green if you use parsley pesto.     We had all the batches drying on the clothes airing rack  ( must get a proper pasta drying rack) and as we had the fire going they all dried out overnight and started dropping to the floor so it was a race to get them off the rack and into the storage tin before they hit the ground.  Pasta tonight !
